Yummy yummy in my tummy! This Crock Pot Vanilla Sour Cream Cake is the perfect treat for a weeknight meal, pitch-in or holiday meal! You are gonna love it!

Most people love chocolate. While I enjoy some good chocolate, white chocolate and vanilla are my favorite flavors. So when I saw this Crock Pot Vanilla Sour Cream Cake in Gooseberry Patch’s Slow Cooker Fall Favorites, I was pretty excited to give it a try!

Crock Pot Vanilla Sour Cream Cake Notes:
- The original recipe for this cake called for cooking it on high for 4 hours. However, mine was done between an hour and a half and two hours, so the first time you make this delicious cake, watch it closely to see how your crock cooks it up.
- If you don’t like sour cream, don’t worry. You won’t taste it. It just serves to make the cake super moist and yummy.
- I used good ol’ Sir Hamilton (myHamilton Beach Programmable Insulated Slow Cooker). I knew I could count on him to cook Crock Pot Vanilla Sour Cream Cake evenly…and boy did he deliver! If you don’t have your own Sir Hamilton (I highly recommend that it be your next crock pot purchase!), you can use a 6-quart slow cooker.

Ingredients
- 16.5 oz pkg white cake mix
- 3.5 oz pkg vanilla instant pudding mix
- 1 cup sour cream
- 1 cup water
- 3/4 cup oil
- 4 eggs beaten
- 11.5 oz pkg white chocolate chips
- Optional: caramel ice cream topping
Instructions
Put all of your ingredients, except for your caramel topping, in a bowl and mix well
Spray your crock pot with cooking spray
Spoon your batter into your crock pot and spread evenly
Place 6-8 paper towels on top of your crock pot, cover and cook on high for 1.5-4 hours (times can vary greatly depending on your particular slow cooker, watch carefully the first time you make it to know how your slow cooker cooks this cake)
Serve your cake warm with your caramel topping drizzled over top

Hi Aunt Lou,Sorry to sound dumb but I’ve never used my crock pot to bake a cake. You say to watch it closely to make sure not to overcook but how do I tell when it’s down? I can hardly wait to make this it sounds so good.

Hi Kris!The center of the cake will be set up. If you want, take a toothpick and stick it in the center of the cake and remove it. If there is batter on the toothpick, it needs more time. If it comes out with crumbs on it or comes out clean, the cake is done. Make sure you do not use a crock pot that cooks really hot. It will burn the edges before the center is done cooking. (I know this one from experience!). I hope you love this cake as much as we do!

Might one substitute applesauce or butter for the oil? What would the ultimate fat content be? (Sour cream, oil, and eggs pack a wallop…as does the sugar in the cake mix, pudding, caramel, and chocolate chips. I’m trying hard to be good.)

Hi Teresa!I haven’t tried it any other way than as described above. I am a big believer in moderation, so if this is too tempting to have around the house, I would make it for a potluck, family gathering/company or even make it and take the leftovers into work so that I could have my cake and eat it too… just not too much ;).

First off Thank You for all the wonderful recipes. So far I have loved them all.
I have this one in my crock right now. I had white cake mix and only chocolate pudding and chocolate chips so it’s a little modified but i think it will be great. Since that’s all I had on hand and craving something sweet. I will try with your ingredients also as I love vanilla cake too.Reply

Sounds delicious….but I am not a fan of white chocolate at all. Would choc chips work as well? As a matter of fact, I do not like white chocolate. It may affect the color but I would think it would work otherwise. Thanks.Reply

Hi Sue!I love my casserole crock pot too! I haven’t tried it in my dear Cassie yet, but I think it would work well. Make sure you watch it closely the first time so you know if the time needs adjusted when making this in a casserole crock. Enjoy!

Do you put the lid over the paper towels or just cook with the paper towels on top. Also can you substitute the vanilla chips for chocolate.

Hi Cindy!Yes, put your lid on top of your paper towels. The paper towels are only there to keep condensation from dropping on top of the cake. I have not tried it with vanilla chips, if you do, let me know how it turns out! Enjoy!
